Pininyahang Manok Recipe (Pineapple Chicken)
Pininyahang Manok literally translates to pineapple chicken. This Recipe calls for chicken slices to be marinated in pineapple juice then stewed with pineapple chunks. Aside from pineapples, secondary ingredients such as carrots, bell pepper, and milk make-up the dish.
Ingredients
1kl Chicken (cut into serving pieces)
1 cup pineapple chunks (430g can pineapple with light syrup) drained (reserve syrup)
1 carrot, wedges
2 small potatoes, wedges
1 green bell pepper
1 piece onion, minced
6 cloves of garlic, minced
1 small can dry peas
1 cup evaporated milk or coconut milk
2tbsp. fish sauce to taste
1 tsp. ground black pepper
Directions:
In a pan, sauté the garlic and onion. Add the chicken and continue sautéing until light brown. Season with fish sauce. Mix well.
Add the pineapple juice and cover the pan. Simmer for 8 to 10 minutes.
Add the potatoes and carrots. Cover the pan and simmer until the vegetables are cooked and slightly soft.
Add the pineapple chunks, green bell pepper, black pepper, peas and evaporated milk. Stir the ingredients well.
Cover and simmer for another 8 to 10 minutes. If you prefer a thicker sauce, continue simmering for additional 3 minutes.
Transfer the pininyahang manok in a serving dish. Serve and enjoy!
