Ingredients:
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/4 cup granulated sugar
1/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup mini Reese’s Pieces candies
1/4 cup peanut butter (for stuffing)
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl, beat together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
Beat in the egg and vanilla extract until fully combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Gently fold in the mini Reese’s Pieces candies.
To form the stuffed cookies, scoop a tablespoon of dough and flatten it in your hand. Place 1/2 teaspoon of peanut butter in the center and fold the dough around it, sealing the peanut butter inside. Roll into a ball and place on the prepared baking sheet.
Repeat with the remaining dough and peanut butter, spacing the cookies about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
