For the chicken:
– 4 boneless, skinless chicken breasts

– 1/2 teaspoon garlic powder

For the sauce:

– 2 cups mushrooms, sliced
– 3 garlic cloves, minced
– 2 cups fresh spinach
– 1 cup heavy cream
– 1/2 cup chicken broth
– 1/4 cup grated Parmesan cheese
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
For garnish:
– Fresh parsley, chopped
Directions:
1. Prepare the chicken: Season chicken breasts with paprika, garlic powder, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
2. Make the sauce: In the same skillet, melt butter. Add mushrooms and cook for 3-4 minutes until tender. Stir in garlic and sauté for 1 minute. Add spinach and cook until wilted.
3. Add the cream: Stir in heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens. Season with salt and pepper to taste.
4. Combine: Return the chicken to the skillet and spoon the sauce over it. Simmer for 2-3 minutes to heat through.
5. Serve: Garnish with fresh parsley and enjoy with pasta, rice, or mashed potatoes.
