Ingredients:
4 pork chops
2 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1 1/2 cups shredded cheddar cheese
4 large potatoes, thinly sliced
1/2 tsp dried thyme
Salt and pepper to taste
1/4 cup breadcrumbs (optional for topping)
Directions:
Preheat oven to 375°F (190°C).
Season the pork chops with salt, pepper, and thyme. In a large skillet, melt butter over medium-high heat. Add the pork chops and sear until golden brown on both sides (about 4-5 minutes per side). Remove from the skillet and set aside.
In the same skillet, add minced garlic and cook for 1 minute. Stir in heavy cream and bring to a simmer. Reduce the heat and stir in 1 cup of cheddar cheese, cooking until melted and smooth.
In a greased baking dish, layer thinly sliced potatoes. Pour the cheesy cream mixture over the potatoes, then top with remaining cheese.
Place the seared pork chops on top of the potato mixture and bake in the oven for 30-35 minutes, until the pork chops are fully cooked and the potatoes are tender.
Optional: Top with breadcrumbs and bake for an additional 5 minutes to add a crispy finish.
