This creamy cheesecake with a graham cracker crust and a sweet blueberry topping is pure perfection!
Ingredients:
Crust:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup sugar
• 1/2 cup butter, melted
Filling:
• 3 (8 oz) cream cheese, softened
• 1 cup sugar
• 3 eggs
• 1 tsp vanilla
• 1 cup fresh blueberries
Topping:
• 2 cups blueberries
• 1/4 cup sugar
• 1 tbsp lemon juice
• 1 tbsp cornstarch
• 2 tbsp water
Instructions:
Make Crust: Mix crumbs, sugar, butter. Press into 9-inch pan, bake at 325°F for 10 mins. Cool.
Make Filling: Beat cream cheese and sugar. Add eggs, vanilla, fold in blueberries. Pour over crust.
Bake Cheesecake: Bake 55-65 mins, cool in oven 1 hour. Chill 4 hours or overnight.
Make Topping: Cook blueberries, sugar, lemon juice, cornstarch, and water until thick. Cool.
Assemble: Top cheesecake with blueberry topping. Serve and enjoy!
