Fillet Stuffed Shrimp with Chicken and Spinach

Ingredients:
– 8 large shrimp, peeled and deveined
– 4 chicken fillets
– 2 cups fresh spinach
– 1/2 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1 teaspoon paprika
– Salt and pepper to taste
– Olive oil
– Lemon wedges for serving
Directions:
Step 1: Prepare the Fillings
Mix together spinach, breadcrumbs, Parmesan cheese, garlic, paprika, salt, and pepper in a bowl. Set aside.
Step 2: Stuff the Shrimp
Butterfly each shrimp and fill with the prepared spinach mixture.
Step 3: Prepare the Chicken
Pound the chicken fillets to flatten them. Season with salt and pepper.
Step 4: Assemble
Place a stuffed shrimp on each chicken fillet and roll up. Secure with toothpicks.
Step 5: Cook
Heat olive oil in a skillet over medium heat. Place the chicken rolls seam-side down and cook until golden brown and cooked through.
